It's difficult to estimate the exact number of saxophone players who can play altissimo, but it's safe to say that many advanced and professional saxophonists have developed the technique. Altissimo playing requires a lot of practice and dedication, so it's not uncommon for many saxophonists to struggle with it. However, with proper instruction and practice, most saxophonists can learn to play altissimo.
