After spending a good few hours yesterday, listening to those Radio 4 programmes and on Youtube watching a really interesting series of short documentaries in China with Sandor Katz, I randomly came across a link this morning to Noma fermentation, via a Tweet

My working week starts tomorrow, so I thought I'd have a go at Red Cabbage, Carrot, Ginger, Apple, Garam Masala spices and some Curry Powder! I also put on a batch of Lacto Fermented Onions with some Star Anise and Chili (in solidarity with @JayeNM )...

I tried a fermented carrot with Panch Phoran (Indian pickling spices) and over did it. The fennel seed went ballistic and although it is perfect for Indian veg curries you can only use a small amount. I recommend easing up on the flavourings (English spelling @JayeNM !!)

Fennel overpowered my last Sauerkraut and has also ruined bread I've made with it, so I'm never using it again.

An update on the fermenting experiment. The Chilli Sauce is absolutely delicious and not overly hot at all. Just a really nice chilli flavour with enough punch to make it interesting. Even the kids like it, so that's a winner.

The red cabbage is also really enjoyable. It's really developed over the last few weeks and has started to take on a nice acidic edge. The curry flavour is just there in the background.

I was really disappointed with the onions at first. They tasted really flat at the beginning of the week, but tasting today, they've really changed and again, that acidic vinegary note is coming through, with a bit of spice! The murky brine doesn't look quite as appetising as vinegar!

That looks and sounds yummy! I would love that red cabbage and I became addicted to chilli sauce and cheese on toast after picking up a jar from a remote chilli shop somewhere.
