My working week starts tomorrow, so I thought I'd have a go at Red Cabbage, Carrot, Ginger, Apple, Garam Masala spices and some Curry Powder! I also put on a batch of Lacto Fermented Onions with some Star Anise and Chili (in solidarity with @JayeNM )...

I tried a fermented carrot with Panch Phoran (Indian pickling spices) and over did it. The fennel seed went ballistic and although it is perfect for Indian veg curries you can only use a small amount. I recommend easing up on the flavourings (English spelling @JayeNM !!)

Fennel overpowered my last Sauerkraut and has also ruined bread I've made with it, so I'm never using it again.
