I mostly play in ensembles/orchestras of some sort. Cello gets a surprising mix of music: classical, film music, music theatre. I try to do chamber music, but it's not easy to find people to play trios and quartets with. Sax has mostly been played in large wind bands, so that again means playing a huge range of styles.
I've only managed to play big band (which is one of the things I really want to do) on a couple of summer schools.
Viols are primarily consort instruments and the majority of the repertoire is renaissance and early baroque. Unfortunately, a lack of players round here means I don't get to play.
Bass is new and I suspect in the short term it will be rock and blues type of stuff as that seems to be the 'standard' way in. Again, I would be aiming for jazz and big band on bass.
