This is a great sauce you can use for sandwiches, in burgers, on green vegetables, or eggs. It's easy to vary the spices, too. No cooking is required. Optionally, you could cook the onion.
  1. Silky soy (200 grams) (Silky Tofu) This needs to be thick, but not necessarily solid and hard. Not liquid, it shouldn't pour out.
  2. Garlic (1 clove) chopped
  3. Red onion (1/2) or shallot, chopped
  4. Olive or nut oil (1 Tbl)
  5. Balsamic vinegar (1/2 Tbl)
  6. Mustard 1 Tsp -old fashioned with seeds works well, but again, experiment!
  7. Soy sauce 1Tsp
  8. Spices: salt, pepper to taste. Optional, try curry powder, chili powder, turmeric, broth cubes...
Put everything in a food processor, whip until smooth. Taste, adjust seasoning.

Unsweetned, actually I think it's called Silky Tofu, I'll correct that. This is a great taste, regardless of whether one is vegan or not, and it's fun to mess with the formula.

The tofu has no taste, but gives the texture that otherwise is provided by egg or egg whites. It does add protein, though.
I swear by this recipe, but it all depends on seasoning and proportions.
