As an aficionado of all things spicy I've spent many years working on an ultimate hot sauce recipe. Here's where it has lead me- a superb mix of fruity, sweet and spicy...

1 big can of mango chunks
1 red onion, finely chopped
a glug of cider vinegar
1 tsp cumin
1 tsp ginger powder
1 tsp all spice
1 tablespoon of honey
Chillies to taste (3 or 4 scotch bonnets , finely chopped and deseeded, work for me)

put everything in a pan and boil for ten minutes, adding a minimal amount of water if needed. Blend, bottle and keep in the fridge. Very good on eggs, cheese based dishes and -in my household- pretty much anything else...

Very good of eggs, cheese based dishes etc...

Sounds delicious, although i think Scotch bonnets might be a tad too much for me. I'm more of a jalapeño or chipotle wimp. Thanks Jules, will definitely try this 🙂

I've made it with Jalapenos before onw and it works fine... I suspect Chipotle would smokify it quite a bit- not sure if that's a good idea or not

I make my own hot sauce as well from the peppers I grow. Two ingredients; hot peppers and vinegar. Taste depends on how long I age a batch before straining the pulp for sauce. The current batch aged a year... and will last probably two or three more beyond that even though each batch is actually less than a full bottle. It had two varieties of pepper; the Carolina Reaper and the Bhut Jolokia. I call it Drop of Death. You just need one drop. Beyond that? Well, the death part. Seriously, the peppers themselves can have great flavor and dry wonderfully for powder. A very little goes a long, long way, and If you like to spice up your meals and/or cooking they're actually quite frugal in this regard. A very, very, very, very little can flavor dishes for serving guests. None have gotten to that second part... yet. The guests, that is.
