Off stave notes

Another beginner question I'm afraid.

The key signature is written as sharps or flats on the stave. Am I right in assuming that an equvalent note higher or lower than the stave would also take on the appropriate change from the key signature?
 
Yes, they apply to those notes in whatever octave. Not necessarily the stave.

To be pedantic (and why not?) the correct word is staff.

One staff, two staves.

A bit like dice, I often say "throw the dice" when there is only one and it's a die.
