Yep all three..lol..which is the best dont know what encoding is..Recording for what? Self assessment? Sharing here? Producing a No.1 hit?
Lots of folks get good value from a field recorder (zoom, tascam); good mics, good encoding, lots of storage, portable etc. Or, of course, a mobile phone.

The bit where the sound, as measured by the microphone and it's electronics, is converted into digital information. At this point, different choices can be made depending if it's for voice, music etc.dont know what encoding is..
I came here to say that- don't use a wireless set up for recording. they're designed for live performance not studio work.Oh, and, as for getting a wireless mic to record to a laptop from a caravan. Don't do it.

Yes- at the most basic (but pretty impressive none the less) there's Audacity, and its free. I'd suggest starting with that and taking things form there..do i need specific software
