Tuna Fish Tart.

A recipe developed by yours truly some 25 years ago.


2/3 tins of tuna - drained and slightly flaked.
200 - 250g strong cheddar or preferred hard cheese - grated
1 large onion, roughly chopped.
150g mushrooms, roughly chopped.
2 cloves garlic crushed.
1 lemon, peel grated and all juice kept.
1 bunch parsley, roughly chopped.
1 egg for coating pastry.
250g short crust pastry.

salt and pepper for seasoning.
olive oil for frying.

1 Tart dish (10 - 12 inches in diameter, or 2 smaller ones. The tart should be about 3 to 4 cms deep.

1. Set oven to 180 centigrade.
2. cook onion, mushrooms garlic and all chopped parsley in oil until soft - medium heat.
3. mix tuna, cheese and all lemon together in large bowl, and then add all cooked ingredients. (add some cayenne pepper, cumin or coriander powder where desired). Mix thoroughly, set aside.
4. Roll pastry into two circles. Line a tart dish with one circle of pastry.
Add mixture, and flatten to shape.
5. Top with other circle of pastry, and coat in eggwash.
6. Put in oven at 180 centigrade for 20 - 25 minutes until pastry is golden.
