Sticky Toffee Pudding

6oz chopped dates
1 tsp bicarbonate of soda
2oz butter
6oz sugar
2 eggs
6oz SR Flour
½ tsp vanilla essence

7 oz softbrown sugar
6t ablespoons double cream
4.5 oz butter
½ tsp vanilla essence

1. Put dates in saucepan and pour ½ pintwater over. Bring to boil
2. Remove from heat and add bicarb ofsoda, leave to stand
3. Cream butter and sugar
4. Add beaten egg a little at a time
5. Beat well and then fold in flour
6. Stir in dates with liquid and essence
7. Prepare two 7” baking tins
8. Pour mixture evenly in to 2 bakingtins
9. Bake at 170 c fan (180 ord) oven for20 mins
10. Prepare sauce- mix sugar cream butterand essence in pan.
11. Bring to boil and simmer for 3 mins
12. Pour some of the sauce over thecooked pudding and put in oven to bubble.
13. Serve remainder of sauce and creamwith pudding.
