Fresh wild Salmon with Lemongrass

This recipe is Divine!

You need,1 stalk of lemongrass,
some fresh ginger root-2"
3 cloves of garlic
2-3 tablespoons of sesame oil
1 tablespoon rice wine vinegar
a small chilli pepper.seeded!
salt & pepper
and 2 -3Lbs of fresh salmon.

Take all of the above except the salmon and place in a liquidiser-or mash insanely,you should end up with a smoothish paste.

Brush your fillets with the sesame oil and place in tin foil,spread the paste over the salmon.

Refrigerate whilst playing your sax for an hour or so...

Some would then place the foil wrapped salmon in an oven and bake for approx 10-15 minutes @ 190c/375 gas.

Or as i use a Bain Marie for longer approx 45 mins at 150-160c/300/320gas,just make sure it is cooked all the way through,serve on a bed of wild mushroom rice...mmmmmmm.!!
