Another Pasta sauce!

Hi Folks!

Ingredients for 4 people.

2 Red Onions, thickly sliced and quartered.
6 Peppers - Red, Yellow and/or Orange - in 3cm square pieces.
4 cloves garlic, crushed and chopped.
200g Smoked Bacon lardons/chopped smoked streaky bacon.
Olive Oil.
1Ltr Chicken Stock.
3 tbs chopped Basil leaves.
1 tbs tomato puree.
1 pinch of dry chilles (as desired).
1 bunch Rocket, chopped large.
Sea salt and Black pepper.
400g large Chunky pasta (such as Tesco's Finest range).
200g freshly grated Parmesan/Grana Padano cheese.

Heat few tbsps oil in large saucepan.
Add bacon and onion and cook for 5 mins.
Add chopped peppers, and continue cooking.
Then add Garlic, Basil,Chilli and Tomato puree and cook for 10 mins
or so unti the peppers start to soften.
Boil water for pasta in large saucepan as per instructions
Add Chicken stock, bring to boil and then simmer until the liquid
has reduced to fairly thick consistency.
Season as desired.
When pasta is ready add chopped Rocket to the sauce and stir.
Drain pasta and add to Sauce, mixing well .
Serve in large bowls topped with cheese, black pepper and a drizzle of Olive Oil.


For veggies just leave out bacon and use vegetable stock!

My eldest daughter made pasta sauce this week... she and siblings off school due to snow so set to work clearing the paths and making supper
